Tiramisu

Tiramisu is a typical northern Italian dessert, literally meaning “lift me up”, combining a delicate Mascarpone and fresh egg cream with strong freshly brewed espresso mixed with rum.

Step 1

Stiffy whisk the egg whites in a grease-free bowl. Beat the yolks with sugar in a separate bowl until well mixed. Then combine with the Mascarpone. When the mix is well stirred, add the egg whites.

Step 2

Freshly brew extra strong coffee, then add rum or brandy and let cool for 10-15 minutes.

Step 3

Quickly dip the savoiardi (ladyfingers) in coffee and create a layer on the base of a deep rectangular tray.

Cover with a layer of the Mascarpone cream, then brush until the layer is even. Proceed in the same way for the second layer (or third), then sprinkle with some grated chocolate or cocoa powder.

Refrigerate 3 hours at least before serving.

  • 2 egg whites – 4 egg yolks

  • 1 ¼ cups sugar

  • 1 ¾ cups mascarpone

  • 7 ounces Savoiardi (ladyfingers)

  • ¾ cups freshly brewed coffee

  • 1 tbsp rum

  • 7 oz dark chocolate
