Orecchiette with Broccoli and Sausage
Directly from Apulia, where the orecchiette tradional type of pasta was born, an amazing recipe that can express the most all the Mediterrean tradition!
Step 1
Boil a big pot of water with one fistful of coarse sea salt. Cut the stem out of the florets of your broccoli and put the florets in water. Boil them for 30-40 minutes and take them out of the water, saving the water to cook pasta in.
Step 2
Put the Orecchiette pasta in the water, following the cooking time on the container. In a non-stick pan heat up a tablespoon of EVOO with a teaspoon of chopped garlic. Add ground pork and medium heat until thoroughly cooked. Season with salt, pepper, and red pepper flakes. Add the broccoli florets and turn off the heat.
Step 3
Drain the Orecchiette and mix them with broccoli and sausage.
Serve with more black pepper or grated Parmigiano on top.

2 broccoli heads
1 lb ground pork
Salt, pepper, garlic, red pepper flakes, EVOO to taste
